TGIF…In the Girlz Room!

I work for a beer/wine/spirits/energy drink distributor. Going on week #4 this Friday, what started out as a joke, turned into reality. Because the men outweigh the women about 95% men to 5% women we ladies decided to have a private tasting every Friday morning in the girls room! So here is last Friday’s taste testing. We had Granny’s Gingerbread liqueur, which was AMAZING,  and a shot of Captain Morgan’s Spiced rum and coke, which everyone loves!  We started out with about 4  people and look how it’s grown! We will try something new every week! I would love to keep you informed on what we find to be the best beer, wine, and spirits ever!

My Big Fat Mouth….

At our church, Pastor Craig is doing a series at church right now called “My Big Fat Mouth”. Trust me, my mouth has shot off more than once and yes I have regrets, and it wasn’t always directly at the person standing in front of me. He talked about how people say things behind others backs as well, and yes, I am guilty of that too. A strong point he made was a single critical word can pierce, stab, wound and even destroy a person. Those words can stick with us forever, and are not easily forgotten. But kind words can remain with us as well. Your words do indeed have power. As he said, “Don’t be a fault finder. Someone who looks to find what’s wrong, before you find what’s right. Instead be a hope dealer, use words of kindness and hope.” I was so inspired by his sermon yesterday, that I listened to it online today, as I wanted to be sure I didn’t miss anything. It was just as inspirational and motivating today as it was yesterday. There is so much hate and bitterness in the world today, it would be such a blessing to know people can change lives for the better by being hope pushers, vs using cruel words, being hateful towards others and being fault finders. I admire Pastor Craig for his honesty as he not only speaks the word of God, but he also uses his own life experiences to spread the word. And no, they are not always glamorous and perfect. They are at times painful and difficult. He knows he is only human, as we all are. I never walk out of church feeling that I am destined to Hell. I always feel better walking out, because I have learned and realized things in a different perspective.
We all make mistakes, we have regrets, we are not always right, & God needs to put his hand over our mouths at times. But we have a God who loves us unconditionally, and for that I am so thankful to him.

Cauliflower Everything! You Will Be So Surprised!!

Weight Watchers has been good to me so far down 11 lbs and learning each and every day to be more disciplined! Plus the Lion King and I have joined one of the nicer gyms in Broken Arrow.  Yes, I drag my butt out of bed at 4:30 AM to be there at 5:00 AM, and it’s TUFF, no doubt!  But, it gets me going for the day, and my energy level just keeps increasing!

This is one of the recipes they have talked about in WW that is just the bomb! I am making it tomorrow. I did buy the already chopped up cauliflower in the produce section, along with already chopped tomatoes and onions. I feel like I am at a point in my life, if I have to spend a little extra for convenience, that’s exactly what I am going to do. I love tabouli, so I am super excited to see how this turns out! I will post a pic once I get it made and share my thoughts on the taste. I am a huge fan of the cauliflower mashed taters, they have not failed me yet, along with the cauliflower rice. Pretty sure this will be just as good!

Lion Queen

  • 1/2 large head of cauliflower chopped up into florets (discard the tough core)
  • 3 large bunches finely chopped flat-leaf parsley
  • 2 cups finely diced tomatoes (about 8 large tomatoes with flesh scooped out)
  • 1 bunch green onions, finely chopped (white and green parts)
  • 1 English cucumber, peeled and finely diced (after seeds scooped out)
  • 1/3 cup extra-virgin olive oil, plus more to taste
  • 3 tablespoons fresh lemon juice, plus more to taste
  • 2 tablespoons finely chopped fresh mint, plus more to taste
  • 1/2 teaspoon Celtic sea salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  1. To make the cauliflower rice, place the raw florets into a food processor fitted with the S blade, and pulse until the consistency of couscous.
  2. Transfer this mixture to a large mixing bowl, add all of the other ingredients, and toss until well combined. Tweak olive oil, lemon juice, mint, salt, and pepper to taste.
